Here it is. Long Island Blueberry cake. Each year when blueberries are plentiful, I make this blueberry cake. I started making it after visiting my sister on Long Island.
There was a blueberry bush in her garden that was protected with a net so we humans could eat a few berries. Without this protection, the birds feasted on the plump berries, and there was never enough to make the cake. The recipe take time, but it is worth it. It is delicious.

2 cups blueberries (or 2 ½)
2 1/3 cups flour
1 t cinnamon
1 ¼ cups sugar
½ cup butter
2 t baking powder
½ t salt
1 t vanilla
½ cup milk
Rind of lemon grated
Dry bread crumbs (for dusting pan)
1/2 cup walnuts, crushed. (optional).
I. Berries: Preheat oven to 375 degrees. Pick over and wash berries. Drain in a sieve and turn them onto a towel in a single layer. Pat dry with a second towel and set aside to dry thoroughly.
II. Topping: In a small bowl combine 1/3 cup flour, cinnamon and ½ cup sugar. Cut in ¼ cup of the butter until the mixture resembles course crumbs. Set aside.
III. Sprinkle Berries (OK if you don’t) – Sift together remaining flour, baking powder and salt. Place berries in a bowl and sprinkle with 1.5 T of dry ingredients. Toss gently. Set aside.
IV. Cream the remaining butter with the remaining sugar. Beat in the vanilla and egg, very well until mixture is light and fluffy.
V. Stir in the remaining dry ingredients alternately with the milk, starting and ending with the dry ingredients. Stir in the rind.
VI. Spoon the stiff batter over the blueberries and with a rubber spatula. Fold until just mixed. Turn into a buttered pan that has been dusted with dry bread crumbs. Spread evenly. (9 by 13 inch glass or metal pan)
VII. Sprinkle with nuts(optional). And then cinnamon topping. Bake 50 minutes or until done. Allow to cool on a rack in the pan for 30 minutes. Loosen around the sides with a knife. Place a large sheet of foil over the cake and invert it onto a rack.
VIII. Then call Hal and your other friends to come over and enjoy this great cake with you. Make sure someone brings good coffee and someone else brings some vanilla ice cream!
