3 pounds red skinned potatoes, washed, skin on
1/4 cup olive oil
1/2 teaspoon fresh rosemary, chopped
2 teaspoons sea salt (more to taste)
1 teaspoon pepper
1 teaspoon chopped garlic (optional)
1/2 cup soy or almond milk
What to do:
Chop potatoes into large cubes and place in a large pot that’s half-filled with water. Bring to a boil and boil until the potatoes are fork tender, about 20 minutes. Drain, reserving just a bit of the cooking water in the bottom of the pot (just so there’s a few teaspoons of hot water in there to aid in mixing). Return the potatoes to the pot and add the olive oil and seasonings. Mix and mash with a fork and a mixing spoon (or, if you have a potato masher, now’s the time to get that out!). Once all the potatoes are coated and lightly mashed, add in the milk and mix until your arm gets tired – to desired consistency. I like to leave a few lumps in there because it looks so homemade (and it’s easier on the arms!).
