Miss Rachel’s Pantry: Mango Chutney, Yum!

Mango Chutney

I recently used this Indian-inspired topping on curried tofu “chicken” salad. Delish!
You’ll need:
– 2 cups of frozen mango chunks
– 1/2 medium onion, chopped
– 1/2 medium red bell pepper, chopped
– 1/2 cup sugar
– 1/2 cup white vinegar
– 1 pinch salt
– 1 teaspoon chopped ginger
– 1 teaspoon chopped garlic
– 1 teaspoon curry powder
– 1 TBSP raisins (optional)
Place everything in a medium pot over medium heat and cover. Cook covered for 35-40 minutes, stirring occasionally, until the mango softens and begins to break down, and the mixture thickens to a sauce. Serve cool. Enjoy!
