I have loved meatloaf since I was a little kid. I have made it many times as an adult and since it is getting cooler outside, I felt like making it recently, so I did. A friend of mine gave me a recipe for Meatloaf Cupcakes a while back. I wanted to try the cupcake idea with my recipe and it came out great! Give it a try!
Preheat oven to 350 degrees
1 pound lean ground beef (90% lean or better)
1 cup of dry bread crumbs (I used Progresso Italian Style Bread Crumbs)
1 small red onion chopped
1/2 green pepper chopped
1 tablespoon chopped garlic chopped
1 tablespoon spicy mustard
1/2 cup shredded carrots
3/4 cup water
1/4 cup ketchup
1 apple, remove core and chop (I like the skin so I left it on but you can remove it you want)
Mix all ingredients in a mixing bowl, you may need to use your hands. Get it really mixed up.
Once thoroughly mixed:
For Meatloaf – shape into a loaf and put in baking pan or Pyrex Baking tray – bake at 350 degrees for 40 to 45 minutes or until done.
For Meatloaf Cupcakes (should make 12) – spray non-stick cupcake pan with Pam, then add the mixed ingredients into the individual cake holes. Do this so that the ingredients are evenly spread out in the 12 cake holes. Bake at 350 degrees for about 25 to 30 minutes, or until done. Serve them after some cooling.
The batch you see pictured here were delicious. As you can see I made the Meatloaf Cupcakes, to check that they were done enough, I removed one Meatloaf Cupcakes, cut it in half and made sure it was not pink. You can do the same with the Meatloaf, cutting it to make sure it is fully cooked. Serve after some cooling.
I ate the Meatloaf Cupcakes just as they were and they were great! They were very moist. The pepper, onions and apples remained somewhat crispy and the apples made the Meatloaf Cupcakes sweet. You can add salt and pepper to your liking and you can top the Meatloaf or Meatloaf Cup Cakes with ketchup if you so desire. Enjoy!
