THE DIET SODA CAKE: Another Low Fat, Unusual Pairing Recipe

Here is the Diet Soda Cake recipe that my friend Lynn told me about,

she emailed it to me to post on – so here it is!


1 l8 oz box dry cake mix (any flavor)

10 oz. diet soda (any flavor)

1 – 2 egg whites (slightly beaten – optional but cake stays together and is fluffier)

1. Mix the dry cake mix, the diet soda, and the egg whites until well blended.

2. Pour into a 9×13″ sprayed pan or cupcake tins.

3. Cook according to directions on cake mix box.

4. You can add a dollop of Cool Whip for 0 points

(4 points a slice or 2 points /cupcake)

Hope you enjoy it.  I use individual cupcake papers and keep them in  the freezer.

    I have been wanting to try this. I think I will have to do the chocolate as pictured since I can’t get them out of my head now!

    What makes it low-fat? Does the soda substitute for oil, maybe? And, of course, egg whites replace whole eggs.
